After charging an item to a patron you can immediately change the due date by clicking on the row actions button for the title and selecting "Change Due Date" from the drop-down list:
If you need to change a due date after closing the Patron Services page, search for the patron using one of the methods displayed under the Patron Records tab (left) and open the Patron Services page. Display all loans for the patron, then use the row actions button next to the title of the loan for which you want to change the due date.
